
Ingredients
- 1 cup Govind Bhog Rice (Basmati Rice will not go well in this recipe)
- 1 cup cubed green gourd (Lauki)
- 5-6 tablespoon Poppy seed paste
- 2-3 Bay leaves
- 1 teaspoon black pepper
- 2 small cardamoms (green)
- 2 big cardamoms (black)
- 5-6 cups of water (adjust according to the consistency preferred)
- Salt per taste
- For tempering
- 1 teaspoon fenugreek (Methi) seeds
- 2 whole dry red chili
- 2 tablespoon ghee

Preparation Time: 10 minutes
Cooking Time: 15 – 20 minutes
RECIPE:
Khichdi
- Wash the rice and soak it for 10 minutes
- Heat water in a pan for few mins and add the spices with salt

- Stir the spices in water and now add rice and lauki
- Continue cooking on medium heat and keep stirring to avoid the rice sticking to the bottom of the pan
- Once rice and lauki are cooked, add the poppy seed paste to this
- Stir the poppy seed paste with the rice and cook it for 10 more minutes
- Adjust the liquid consistency as per your need
- Once the desired consistency is achieved, take it off from heat
Tempering (Tadka)
- In a small pan, add ghee
- Once melted, add dry red chili and methi seeds
- Once the spices crackle and color changes, add this to the rice

Khichdi is now ready and can be served with ghee, fried potato, Papad and chutney.
This dish can also be prepared without gourd
