
Ingredients
- 500 grams of fresh mutton
- 2 finely sliced onions
- 1 teaspoon ginger paste
- ½ teaspoon garlic paste
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- 3 tablespoon mustard oil
- 3 tablespoon ghee
- 100 grams beaten curd
- Roughly crushed whole garam masala (Cinnamon, Mace, Cloves, Green Cardamom, Bay Leaves, Whole black pepper, Cumin Seeds, Nutmeg Powder)
- Chili powder per taste
- Salt per taste

Cooking the Mutton
Step 1:
- To the fresh mutton add salt, turmeric, cumin seeds, bay leave, 1/4th of the sliced onions ,1 teaspoon oil
- Coat the mutton with these ingredients and mix the mutton well

- Steam this in the cooker for up to two whistles
- After 2 whistles, remove the mutton from the oven and let it cool down
Step 2:
- Heat a thick bottomed pan and add the ghee and remaining oil
- Once the ghee is melted and the oil is hot enough, add onions and fry it till it is light pink
- Add garlic ginger paste and coriander powder to the onions
- Sauté for five minutes then add the previously steamed mutton along with the crushed garam masalas

- Fry it for a while and then add beaten curd and red chili powder
- Keep frying the mutton till the spices are well coated and the oil starts to separate
- Once the oil is starting to separate, add nutmeg powder
- Now add some lukewarm water and transfer this to a pressure cooker

- Cook on high flame in the cooker give for another 1-2 whistle as required
- Let it cool down and mutton is now ready to be served with Roti, Rice or Paratha
