Cooking Instructions

Step 1: Preparing the Pua mixture

  • In a bowl add maida, suji and sugar; mix the dry ingredients and then add 2 tablespoons of oil to this dry mixture; give the ingredients a good mix with the oil
  • Now add saunf, cardamom and slowly start adding milk while stirring the mixture to avoid any lumps being formed
  • Stop adding water once the mixture is mixed well and the batter consistency is medium thick
  • Cover the batter and let it rest for 1-2 hours for all ingredients to be mixed well and sooji (rawa) to become soft

Step 2: Frying the mixture

  • Heat oil in a thick bottomed pan
  • Once the oil is hot, use a ladel to pour a small quantity of the mixture in the oil
  • Let it cook for few mins and then flip over to the other side till it is golden brown
  • Once both sides are golden brown take out the pua on a tissue to soak the excess oil
  • Repeat this process one by one for each pua
  • Pua is now ready to be served!
