Ingredients
- 300 grams OR 10 pieces of Parwal (also known as pointed gourd)
- 2 medium sized onions finely chopped
- 1 big sized tomato finely chopped
- 50 grams of mustard oil
- 2 teaspoons of coriander (dhania) powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of red chili powder
- Salt as per taste

Cooking Instructions
- Wash the Parwals under running tap water and keep it in a colander to strain the excess water
- One the excess water is removed and parwals are dry, gently scrape off the skin
- After scraping, cut the whole parwals into 2 or 4 pieces (as shown in the picture)
- Now take a thick bottomed deep-frying pan or kadhai and put it on the gas oven
- Add the mustard oil to this pan and heat it
- Once the oil is hot, add the parwal to the pan and sprinkle salt on it; make sure the parwals are not sticking on to each other and are evenly spread out in the pan
- Cover the pan with the lid
- After 2- 3 minutes, take off the lid and flip the parwal to the other side and fry it till it is golden brown



- Now add the chopped onions to the parwal, sprinkle little salt and fry them together for 5-6 minutes
- Once the onion starts to change its color add the chopped tomatoes and mix all the ingredients together
- Now add all the remaining spices, blend it well with the ingredients in the pan and keep frying
- The spice mix in the parwal will start becoming brown (well cooked) and oil will start separating from the pan


- Once the oil separates the parwal masala is ready
- Dish it out in a plate and serve it with warm parathas or roti
