Methi Chicken

Ingredients

  • 500 grams chicken (with bone or boneless) – I prefer cooking it with bone
  • 250 grams thick curd
  • 100 grams vegetable oil
  • 2 teaspoon garlic paste
  • 2 tablespoon roughly crushed garlic
  • 1 teaspoon red chili powder
  • 1 tablesppon methi seeds (fenugreek seeds)
  • 2-3 pieces dry whole red chillies
  • 2-3 tablesppon kasoori methi (dried fenugreek leaves)
  • Half cut lemon
  • Salt per taste
  • 1 medium sized onion finely chopped (Optional)

Preparation time

  • 4-5 hours (Includes marination time)

Cooking time

  • 20-25 minutes

Cooking Instructions

Step 1: Marinate the chicken

  • Wash and clean the chicken nicely; drain the excess water from the washed chicken
  • To marinate the chicken, add lemon, salt, garlic paste, chillli powder and curd
  • Mix all the ingredients well with the chicken and cover it
  • Refrigerate the chicken mixture in the fridge for 4-5 hours (note: overnight marinated chicken adds more flavor to the recipe)

Step 2: Cooking the marinated chicken

  • Take a thick bottomed pan and place it on the oven on medium heat
  • Add the oil to the pan and let it heat
  • Add chopped garlic, methi seeds and dry red chillies
  • Add chopped onions (optional)
  • Let the spices roast well in the oil on medium heat
  • Add the marinated chicken to the oil now, stir the chicken to blend well with the spices and cover the pan
  • While the chicken is cooking, the curd and oil will slowly start separating and chicken will cook in that mixture of spices and curd
  • Keep stirring the chicken frequently with a spatula so that it does not stick to the bottom of the pan
  • The whole process of cooking methi chicken is on medium heat; the chicken will cook gradually and absorb the water and keep stirring on medium heat to gain a medium to thick consistency
  • Once the chicken is completely cooked, add kasoori methi (dried fenugreek leaves) to the cooked chicken and mix well. Cook the chicken for another 4-5 minutes and then take it off the gas
  • Methi Chicken is now ready to be served with hot roti, paratha, bread, rice or anything else you wish to serve it with.
